Everyone loves rice crispy treats! (Right? I think so.) For me, they bring back memories of after soccer game snacks and class parties. This is the grown-up version of the delicious childhood dessert. Caramel is mixed with the cereal and the chocolate topping is a wonderful addition to this sweet treat. Baking buddy, MMcK, made these to bring to work and they disappeared, luckily I snagged a few before they were all gone!
3 Tbsp Butter
10 oz Package Marshmallows
6 Cups Rice Krispies Cereal
1/2 Cup Caramel Sauce
1-1/2 to 2 bags Semi-Sweet Chocolate Chips
Line a 9x13 inch pan with foil and oil.
In the microwave, melt Butter 20 seconds at a time. Add Marshmallows and stir until just barely melted and combined, microwave again for a short time if needed. Stir in caramel. Add Rice Krispies. Stir until evenly coated.
Pour mixture into prepared pan and press evenly into pan. Allow to cool, about an hour. Pour Chocolate Chips into a large bowl. Microwave at for 20 second intervals (stirring after each), until completely melted. Do not overheat!! (If the Chocolate starts to seize you can add a little Cream or Milk.) Use a sharp knife to cut into even squares.
Store in refrigerator and enjoy!
