Saturday, January 21, 2012 Pumpkin Cookies with Cinnamon Cream Cheese Frosting

Adapted from Once Upon a Recipe 
(The Cookies are exactly the same, the Frosting has been altered.)

For the Cookies:
1 Cup Butter, Softened
1 Cup Granulated Sugar
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
1 tsp Cinnamon
½ tsp Ground Nutmeg
1 Egg
1 tsp Vanilla
1½ Cups Pumpkin Puree
2 Cups All-Purpose Flour

Preheat your oven to 350°F. In a mixing bowl, beat the Butter with an electric mixer on medium speed for about 30 seconds. Add The Sugar, Baking Powder, Baking Soda, Salt, Cinnamon, and Nutmeg. Beat until thoroughly combined, taking care to scrape the bowl down at least once. Add the Egg and Vanilla, and beat until combined. 

Beat in the Pumpkin. 

Add in the Flour and mix together well. 

Drop the dough by heaping teaspoons onto a cookie sheet. 

Bake for 10 to 12 minutes or until tops are just set and have lovely golden brown ridges. 

Transfer the cookies to a wire rack and allow to cool.

For the Frosting:
1 (8oz.) Package Cream Cheese, Softened
¼ Cup Butter, Softened
1 Cup Icing Sugar
¼ Cup Brown Sugar
½ tsp Vanilla
1 tsp Cinnamon
¼ tsp Nutmeg

Combine all ingredients and beat until smooth.
Frost the cookies when cool and enjoy!
