....is Mint Brownies with Candy Cane Oreo Crumble


I know a lot of people love (LOVE) Christmas, and I do too, the lights, the decorations, everything. There's a great feeling that comes with December. But Christmas is not here yet, even though I think all of retail disagrees with me, we haven't even had Thanksgiving yet. Normally I shy away from all things holiday until after Thanksgiving but I made an exception when I saw Candy Cane Oreos! I couldn't resist the colorful minty chocolate cookie. I knew they would make the perfect crunchy topping to a gooey brownie. For this recipe I used the brownie layer from my Mexican Chocolate Brownies, the Peppermint Patty Brownie's mint layer and topped with melted chocolate & crushed Oreos. These are very incredibly rich brownies, absolutely wonderful and I definitely plan to make them again!



The Brownie Layer
1/2 Cup butter
1/2 Cup Bittersweet or Dark Chocolate, Chopped
2 Tbsp Cocoa Powder
1 Cups Sugar
2 Eggs
1 tsp Vanilla Extract
2/3 Cup Flour

The Mint Layer
1 Cup Powdered Sugar
2 Tbsp Butter, Softened
1 tsp Peppermint Extract
1 1/2 Tbsp Cream

The Oreo Layer
1 Cup Semisweet Chocolate Chips
6 Candy Cane Oreos, Crushed



Preheat oven to 350F. Grease a 9×9-inch square baking pan.
In a heatproof bowl, melt Butter and Chocolate together, 20 seconds at a time. Stir with a fork until very smooth. Stir in cocoa powder until fully incorporated. Set aside to cool slightly.

In a large bowl, whisk together Sugar, Eggs and Vanilla extract. Whisking steadily, pour Chocolate Mixture into Sugar Mixture. Stir until smooth.

Add Flour and Salt into the bowl and stir until just combined. Fold in Chocolate Chips.

Pour into prepared pan and spread into an even layer.
Bake for about 35 minutes, until brownies set and a toothpick inserted into the middle of the pan comes out with only a few moist crumbs, not batter, attached.

While Brownies are cooling, mix together all ingredients for the Mint layer.

Once the brownies have cooled, spread the Mint layer over the top evenly and then place brownies in the fridge for 30 minutes so the mint layer can set.

Now, melt the chocolate chips in the microwave, again 20 second intervals and it took slightly over a minute.

Spread the melted Chocolate & press the crushed Candy Cane Oreos over the top of the Mint layer evenly and place brownies back in the fridge for two hours until set.
